Cinnamon Rolls



……Cinnamon Rolls……


I love cinnamon rolls - or specifically Cinnabon! - unfortunately cinnamon rolls arent that big here (yet) Im pleased to discover there are now four cinnabon shops in the UK - although unfortunately none are on my doorstep (or anywhere remotely close!)

This has led to me searching for a perfect cinnamon roll recipe....and here it is!

Ingredients

Serves: 12


For the dough:
250ml warm milk (not boiling!)
100g caster sugar
2 1/2 teaspoons instant/quick/dried yeast
75g melted butter
2 eggs, room temperature
1/2 teaspoon salt
600g bread flour

For the filling:
75g softened butter,
225g dark brown soft sugar
2 1/2 tablespoons ground cinnamon

For the frosting:
100g softened cream cheese
50g softened butter
1/2 teaspoon vanilla essence
200g icing sugar

 Method

 Rolls

1.     Gently warm the milk. (I would do this on the hob rather than microwave - if its too hot you will kill the yeast in next step)

2.    In a large bowl add sugar and yeast to the warmed milk, mix to dissolve the yeast.  Cover bowl and leave for 5 minutes, the liquid should be frothy - this means the yeast is activated and your good to go!

3.      Mix in butter, eggs and salt. 

4.     Add flour and mix well (I do this with an electric mixer with dough hooks on a medium speed, and then knead for a few minutes on a floured surface. It you’re doing this by hand you will need to knead well for a longer period of time to ensure elasticity.

5.      Cover bowl and leave in a warm place until doubled in size (about an hour).

Whilst you're waiting!

6.      Filling - Combine brown sugar and cinnamon in a bowl.

7.      Frosting – In a separate bowl combine softened cheese and butter and vanilla essence. Sift in frosting sugar and mix well.


Back to the rolls!

8.      Roll dough into a 40x50cm (18x20 in) rectangle.


9.      Spread dough with 75g butter and sprinkle evenly with sugar/cinnamon mixture.


10.   Roll up dough and cut into 12 slices (approx. 1.5in a slice).


11.    Place buns in a lightly greased 9x13in baking tin. Cover and let rise until nearly doubled, about 30 minutes. Preheat oven to 200 C (Gas mark 6).

 

12.   Lightly cover buns with foil and put in oven, for 15-20minutes, take foil off for last few minutes to allow to golden brown.

Enjoy!

13.   Spread frosting on warm buns and serve!


**tip** for fresh out of the oven enjoyment blast one bun for 20 seconds in microwave prior to frosting/serving**
